This particular raw ham is a specialty of Tyrol and is obtained from the rump, a part of the pork leg. From the point of view of quality, it is a relatively tender speck.

Preparation
Per lo speck di fesa i pezzi di carne vengono aromatizzati con erbette fresche di montagna e salati a secco. Non presenta parte grassa e si asciuga, leggermente affumicato, all’aria d’alta montagna.

How to taste it
This speck goes well with appetizers. A very tasty combination is given by the rump speck cut into very fine slices with olive oil, lemon juice, rocket and parmesan.
