Servelade is lightly smoked during the production process, which is what gives it its typical flavor.
How to taste it
Servelade in South Tyrol is best enjoyed cold. Cut into slices and garnished with cheese, onion, oil and vinegar, it is a real treat for the palate. But it can also be boiled or grilled.
