The coppa is also known in Italy with the name of “capocollo”. It comes from the meat of the pork neck, to which only salt and aromatic herbs are added.
Preparation
For the coppa we select the best meat, dry salted and flavored with fresh mountain herbs. Lightly pressed and smoked, the cup releases all its aroma.
COME GUSTARLA
Thanks to the slightly mixed composition of its meat, the coppa has a particularly delicate and succulent taste. The ideal is to cut it into very thin slices, it gives salads a touch of refinement.
