Speck is the South Tyrolean specialty number 1 among sausages. For generations, this slightly smoked raw ham has been a fundamental ingredient of South Tyrolean cuisine. The quality is determined by the raw material, the mixture of spices, the brining, the type of smoking, but also the seasoning and aeration.
Only selected pork legs are used for this top quality product from our butcher's shop. They are seasoned, dry salted and lightly smoked according to the ancient tradition. To mature, the original artisanal Villgrater speck is stored for 6 months in the Sesto mountain air.
How to taste it
Cut into slices, our artisanal speck can be enjoyed as a snack with bread, or as a cold appetizer with valerian and cheese salad marinated together. It goes well with pasta dishes, asparagus and many other vegetables and is a basic ingredient of speck dumplings.
